But its beauty reminds us of why we cherish this hallowed summer herb.ÂMaybe you connect lavender with a favorite perfume—or relative who wore it. Perhaps you’ve scented your home with lavender essential oils, or enjoyed the taste of homemade lavender honey ice cream (scroll down for a recipe from one of our readers).
Native to the warm Mediterranean region, lavender came to America via European settlers, according to High Country Gardens. Initial attempts to grow it in 1672 were recorded as fruitless, but American lavender growers have found great success across the country, so you can now find thriving lavender fields in nearly every state.
Here are some southeastern lavender farms worth a visit.1 Since lavender blooms throughout summer in the South, many of these farms will continue producing it into September.

Honey Lavender Ice Cream
Recipe by Cheri Vigna
Ingredients
2 cups of whole milk
1/3 cup of honey
1/4 cup of dried lavender
5 large egg yolks
1/4 cup of sugar
1 cup of heavy cream
Directions
Put milk, honey, and lavender into a medium saucepan. Bring the mixture to a low boil over medium-high heat. Cover and remove the mixture from heat and let it steep for 5 minutes. Pour the mixture through a fine sieve into a clean, medium saucepan. Discard the lavender.
Put egg yolks and sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high until very thick—for about 3–5 minutes.
Meanwhile, bring the honey mixture to a simmer over medium-low heat. Add half the hot honey mixture to the yolk mixture, whisking until combined. Put the mixture back into the saucepan and cook it over low heat, stirring constantly, until the mixture coats the back of a wooden spoon.
Remove the mixture from heat and stir in the cream. Put the mixture through a fine sieve into a bowl set in an ice-water bath. Let it stand until cold, stirring occasionally. Chill in the refrigerator overnight.
Transfer the mixture to an ice cream maker and freeze it according to the manufacturer’s instructions. Serve with cookies.
